Savory Fall Recipes

The weather is turning cool and it’s time for comfort foods. Here are three easy fall recipes that everyone in the family will enjoy!

Simple Bean Soup

Ingredients:

1lb. pinto beans

2 bay leaves

1/2 cup onion, diced

3 stalks celery, diced

1 ham hock (Honey Baked Ham sells them!)

1tsp sage (optional)

Instructions:

Put the beans in a large bowl, cover with cold water and let soak overnight.

Drain and rinse the beans, then put them in a slow cooker. Cover the beans with water and add the ham hock, bay leaves, onions, and celery. Cook on low for 3.5 hours or until beans are tender. Remove ham bone and bay leaves. Leave any bits of ham that fell off the bone.

Substitutions:

You can cook the beans in an Instant Pot and pressure cook for 15 minutes. If you don’t have a ham hock, you can use ham soup base or a low sodium chicken broth.

Cheesy Tomato Bread

Ingredients:

4-oz. tomato sauce (half of an 8oz can)

1/3 cup green bell pepper, diced

1 cup shredded mild cheddar cheese

1/4 tsp salt

Bread of choice (ciabatta, french)

Instructions:

Mix together tomato sauce, bell pepper, cheese and salt.  Pour mixture on top of bread and broil for approximately 3-5 minutes or until melted.
